My delicious salmon winter poke bowl for two. Quick and easy to create and bursting with flavour. I love a poke bowl and this just heats things up to the next level... literally. 

PREP 5mins
COOK 20mins

15 - 20mins

400g salmon
2 cups brown rice
1 bok choy
1/2 cup edamame beans
2 spring onions sprigs
1 baby green chilli
1 tbsp gluten free soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
Sea salt

Coat both sides of salmon with sea salt. 
Pan cook salmon to liking. 
Use the same pan to toss bok choy for 2-3 mins.
Stir soy sauce, rice vinegar and sesame oil to rice.
Now it's time to fill up your warm winter poke bowls.
Green chillies on top to finish.
Snap a pic then eat this delicious bowl of goodness.

Optional: Wasabi Mayo ... 3:1 whole egg organic DF mayonnaise + wasabi.
