SPICY CHICKEN CHORIZO PAELLA

COOK 40-60mins
SERVES 4

INGREDIENTS
400g organic free range chicken thigh
100g chorizo
2 tins organic diced tomatoes
1 zucchini
2 cups brown mushrooms
1 cup baby spinach
1/2 spanish onion
2 cups medium grain rice (I only had jasmine rice cups) 
1 tbsp olive oil
1 baby chilli
Chilli powder
Alllll the S&P

All my ingredients and organic fresh produce from my local farmers market and butcher. I didn’t measure to the gram with this one I just went with the flow of flavours. Get creative!!

METHOD
Lightly brown chicken, chorizo and olive oil in a pan. 
Add diced tomatoes and all vegetables, garlic spices, s&p. Simmer on low for 20-30mins to cooked chicken through. 
Add the rice (the 2 minute pre-cooked cups to save time) into the pan in the last 5 minutes and simmer until cooked through.
